Recipe ingredients
- 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil*
- 1 onion, chopped
- 1 garlic clove, chopped
- 2 tsp. (10 mL) Irresistibles ground cumin*
- 1/2 tsp. (2 mL) Irresistibles crushed chili flakes*
- 1/2 tsp. (2 mL) Irresistibles allspice*
- 1 28-oz. (796-mL) can diced tomatoes*, drained
- 2 cups (500 mL) vegetable juice
- 2 peeled and cubed sweet potatoes
- 1 1/2 cup (375 mL) fresh green beans
- 1 1/2 cup (375 mL) broccoli or cauliflower florets
- 1 19-oz. (540-mL) can lentils*, drained
- 2-year-old Cheddar to taste
Preparation
In a pot, cook onion, garlic and spices in hot oil for 1 minute.
Add tomatoes, vegetable juice and sweet potato.
Simmer half-covered for 15 minutes.
Add remaining ingredients and cook uncovered for another 15-20 minutes.
Sprinkle with grated cheese just before serving.
