Buckwheat Pancakes

Recipe ingredients
- 1/4 cup (60 mL) extra light olive oil*
- 2 3/4 cups (680 mL) buckwheat flour
- 1 tsp. (5 mL) baking soda*
- Pinch of salt
- 1 3/4 cup (430 mL) cold water
Preparation
In a mixing bowl, put 3 Tbsp. (45 mL) oil and all remaining ingredients; beat on high 1 minute; let stand 15 minutes.
In a frying pan, heat remaining oil; pour in batter to make a medium sized thin pancake; brown on each side.
Put pancakes between two sheets of wax paper until all are cooked.
Suggestion
For this mixture, you can add butter for a much milder taste. Prepare batter the day before for lighter results.* We recommend Selection and Irresistibles products.
