Recipe ingredients

  • 24 carefully selected fresh standard Malpeque oysters, cleaned
  • Oriental Sauce:
  • 3 Tbsp. (45 mL) soya sauce*
  • 4 tsp. (20 mL) olive oil*
  • 2 tsp. (10 mL) rice vinegar
  • 1 tsp. (5 mL) chopped gingerroot
  • Lime Sauce:
  • 2 Tbsp. (30 mL) lime juice
  • 1 Tbsp. (15 mL) lemon juice
  • 2 tsp. (10 mL) finely sliced green onion
  • 2 tsp. (10 mL) chopped fresh coriander
  • 1 tsp. (5 mL) each: sesame oil and honey
  • Hot Sauce:
  • 2 Tbsp. (30 mL) chili sauce*
  • 1 Tbsp. (15 mL) each: ketchup and lemon juice
  • ½ tsp. (2 mL) Tabasco sauce
  • 1 tsp. (5 mL) Worcestershire sauce
  • Salt and pepper to taste

Preparation

Open oysters, detaching flesh but leaving it in the shell.
Mix up selected sauce in a bowl.

Suggestion

Enjoy raw oysters with sauce.
