Recipe ingredients
- Sauce:
- 1/2 cup (125 mL) each : milk and frozen concentrated Old South orange juice with pulp
- 2/3 cup (160 mL) dried cranberries
- 3 Tbsp. (45 mL) butter, melted
- 1 cup (250 mL) each : all-purpose and whole-wheat flours, sifted
- 1/4 cup (60 mL) maple syrup
- 2 eggs
- 2 cups (500 mL) milk
- 1/2 cup (125 mL) cold water
- 2 Tbsp. (30 mL) sugar
- 1 tsp. (5 mL) vanilla extract
Preparation
Mix all the ingredients for the sauce in a small saucepan and heat until the butter and the juice are melted. Keep warm.
In a bowl, mix the remaining ingredients and whisk well.
Pour approximately ½ cup (125 mL) of the batter in a Silipro non-stick skillet.
Cook on medium heat for approximately 1 min.
Flip the pancake and cook for 30 sec. more.
Repeat 8 times.
Serve pancakes with sauce.
