Recipe ingredients
- 1 Tbsp (15 mL) vegetable oil*
- 1/2 onion, chopped
- 1/4 cup (60 mL) each: cubed green pepper, corn kernels and diced tomato
- 1 lb. (450 g) ground beef
- 1 x-g envelope taco seasoning
- 1 cup (250 mL) water
- 8 taco shells
- Shredded lettuce to taste
- 1 1/2 cups (375 mL) grated mozzarella
Preparation
In a skillet, brown onion in hot oil for 1 min. Add vegetables and cook 2 min. more. Remove and set aside.
In the same skillet, cook meat 5-7 min. or until thoroughly done. Add seasonings, water and vegetables and continue cooking over medium-high heat for 5 min.
Spoon mixture into taco shells and garnish with lettuce and cheese.
