Recipe ingredients

  • 2-4 Cornish hens
  • 1 clove garlic, cut in two
  • 2 tsp. (10 mL) each: dried thyme, oregano and basil
  • Salt and pepper to taste
  • 3 Tbsp. (45 mL) olive oil*
  • 4 shallots, sliced thin
  • 2/3 cup (160 mL) red wine
  • 2 cups (500 mL) chicken bouillon*
  • 2/3 cup (160 mL) fresh cranberries
  • 1/4 cup (60 mL) maple syrup*

Preparation

Preheat oven to 450°F/220°C.
Rub Cornish hens with garlic. Sprinkle with thyme, oregano and basil. Season to taste with salt and pepper.
In a thick-bottomed skillet, heat oil over medium-high heat and brown hens on all sides, about 10 min. Remove hens to a baking sheet and bake for 20 min.
Brown shallots in 2 Tbsp. (30 mL) pan juices for 3 min.
Deglaze with wine, add chicken bouillon, cranberries and maple syrup and bring to a boil. Simmer for 12 min. Salt and pepper.
