Recipe ingredients
- 1 cup (250 mL) all-purpose flour*
- 1 tsp. (5 mL) baking powder*
- 2 eggs, beaten
- 1 1/2 cups (375 mL) milk
- Pinch of salt
- 1 Tbsp. (15 mL) vegetable oil*
- 2 garlic cloves, chopped
- 1 onion, chopped
- 2 cups (500 mL) chopped mushrooms
- 1 1/2 cups (375 mL) baby spinach
- 2 cups (500 mL) strips of cooked ham or cubed cooked ham
- 5 oz. (150 g) brie, cut into chunks
- Salt and pepper to taste
Preparation
In a bowl, sift flower and baking powder together.
Add beaten eggs, milk and salt, mixing until batter is smooth. Refrigerate 1-2 hrs.
In a non-stick skillet, pour 1/4°° cup (60 mL) cup batter. Cook about 1 min. over medium heat. Turn and brown other side 30 sec.
Repeat 10-12 times. Keep crêpes hot.
In a skillet, heat oil and cook garlic, onion and mushrooms until brown. Add ham and spinach and cook 1 min. Stir in cheese and season to taste.
Put some of this mixture on each crêpe and roll it up like a cigar.
