Recipe ingredients

  • 2 cups (500 mL) milk
  • 1/2 cup (125 mL) minute tapioca
  • 1/2 cup (125 mL) sundried raisins*
  • 1/2 cup (125 mL) sugar
  • 4 eggs, beaten*
  • 1 pinch each of ground cinnamon and nutmeg
  • 2 Tbsp. (30 mL) chopped dried pineapple

Preparation

Preheat oven to 375°F (190°C).
In a saucepan, mix milk, tapioca, sundried raisins and sugar together and cook on low, stirring constantly, until mixture is steaming. Remove from heat, cover and let stand 10 minutes.
Whisk in remaining ingredients briskly. Pour into a lightly greased dish (8 po. x 8 po. / 20 cm x 20 cm).
Cover and set dish in a pan of hot water. Bake for about 30 minutes or until a knife inserted in the centre comes out clean.
Let stand until completely cook before cutting into squares.

Suggestion

For Valentine's, turn flan out on a working surface and cut into the shape of a heart. Decorate with a sprig of mint.
