Recipe ingredients

  • 1 1/4 cups (310 mL) organic flour*
  • Pinch of salt
  • 1 egg*, slightly beaten
  • 1 1/4 cups (310 mL) 2 % milk
  • Unsalted butter* or olive oil* to taste

Preparation

Mix flour and salt together. Make a well in the centre, and pour in egg and a bit of the milk. Whisk just until batter is smooth, adding remaining milk gradually. Let stand if you wish.
In a skillet, heat butter or oil, pour in some batter and cook for 1-2 min. until underside browns. Turn and cook for another 30-45 sec.

Suggestion

Too much whisking causes the gluten in the flour to develop and, as a result, the crêpes will be tough and chewy.
It is not essential to let the batter rest, but it does produces a lighter result.
