Recipe ingredients

  • 1/4 cup (60 mL) unsalted butter*
  • 3/4 cup (180 mL) brown sugar*
  • 2 eggs*
  • 1/4 cup (60 mL) applesauce
  • 1 1/2 cups (375 mL) grated Braeburn apples
  • 1 Tbsp. (15 mL) orange zest
  • 1 cup (250 mL) each: all-purpose flour* and whole-wheat flour*
  • 1 tsp. (5 mL) each: baking powder* and ground cinnamon*
  • ½ tsp. (2 mL) baking soda*
  • 1 pinch of salt

Preparation

Preheat oven to 350ºF (180ºC).
In a bowl, cream butter, brown sugar and eggs together. Mix in applesauce, grated apple and orange zest. Set aside.
In another bowl, mix dry ingredients together.
Stir dry ingredients into creamed mixture.
Pour batter into a lightly greased and floured 8x4 in. (20x10 cm) pan.
Bake for 60 min. or until a toothpick inserted in the centre comes out clean.

Suggestion

For a denser bread, add 1/2 cup (125 mL) raisins and 1/4 cup (60 mL) chopped walnuts.
