Recipe ingredients

  • 3 Tbsp. (45 mL) peanut oil*
  • 2 x 4-5 oz. (120-150 g) Red Grill Angus beef tenderloin  
  • 1/2 red onion, chopped
  • 1-2 Tbsp. (15-30 mL) chopped gingerroot
  • 2 Tbsp. (30 mL) chopped hot pepper (ex: jalapeño)
  • 3/4 cup (180 mL) diced fresh mango
  •  3/4 cup (180 mL) diced pineapple
  • 1 tsp. (5 mL) Irresistibles white wine vinegar*
  • 1 Tbsp. (15 mL) sugar*
  • Chopped fresh coriander or parsley to taste

Preparation

Preheat oven to 200ºF (95ºC).
In a skillet, heat 1 Tbsp. (15 mL) oil and cook tenderloin steaks to desired degree of doneness.
Remove and keep warm in oven.
In the same skillet, heat remaining oil and cook onion, ginger and hot pepper 2 min.
Add diced fruit and cook another 2-3 min.
Stir in white wine vinegar and sugar and cook 2 min. more until fruit is caramelized.
Top tenderloin steaks with fruit sauce and sprinkle with coriander or parsley.
Serve with orzo and fresh asparagus tips.
