Recipe ingredients
- 6 oz (180 g) plain tofu, crumbled
- 1/2 cup (125 mL) ground walnuts
- 1/2 cup (125 mL) minced almonds
- 1/2 cup (125 mL) peanut butter
- 3/4 cup (180 mL) honey
- 1/2 cup (125 mL) powdered milk
- 4 Tbsp. (60 mL) lemon zest and juice
- 1 tsp. (5 mL) almond extract
- Optional apricot jelly
- 1/2 cup (125 mL) grated coconut
Preparation
Put all ingredients in a bowl; mix until smooth.
If the mixture is too dry, add a little apricot jelly.
Shape into 2.5 cm (1") balls.
Roll each ball in grated coconut.
Store in the refrigerator.
