Recipe ingredients
- 1 1/2 cups (375 mL) cooked rice*
- 1 1/2 cups (375 mL) tomato juice*
- 2 lb. (900 g) medium lean ground beef
- 1 egg, beaten
- 1 cup (250 mL) grated mozzarella*
- 1 42-g pouch onion soup mix*
- 2/3 cup (160 mL) each: grated carrots and finely diced celery
- 1/2 cup (125 mL) diced red pepper
- 2 Tbsp. (30 mL) each: chopped fresh chives and parsley
- Salt and pepper to taste
Preparation
Preheat oven to 375ºF/190ºC.
In a bowl, mix all ingredients together.
Transfer mixture to a baking dish and bake 75 min.
Serve with tomato sauce and broccoli florets.
