Recipe ingredients
- 8 oz (225 g) crumbled tofu
- 1 carrot, grated
- 1 scallion, chopped
- 3 Tbsp. (45 mL) mayonnaise
- Salt and pepper to taste
- 12 mini-pita breads
- Alfalfa to taste
Preparation
In a bowl, mix all ingredients except pitas and alfalfa; adjust seasoning.
Fill each pita with 30 mL (2 Tbsp.) tofu filling; garnish with alfalfa.
