Recipe ingredients
- 4 hot dog buns, split in two
- 1 Tbsp. (15 mL) each: Dijon mustard* and mayonnaise*
- 1 Tbsp. (15 mL) olive oil*
- 4 eggs
- Salt, pepper and parsley to taste
- 4 fresh spinach leaves
- 1/2 lb. (225 g) thick smoked ham, minced
- 1/4 lb. (115 g) shaved Monterey Jack cheese
Preparation
Spread Dijon mustard and mayonnaise on each bun. Set aside.
In a non-stick skillet, heat oil and fry eggs. Season with salt, pepper and parsley.
In each bun, put spinach, ham, fried egg and cheese.
In the same skillet, brown buns 1-2 min. per side, pressing them slightly with a spatula.
