Recipe ingredients
- 1/4 cup (60 mL) chicken concentrate
- 2 Tbsp. (30 mL) Irresistibles olive oil*
- 1/4 cup (60 mL) fresh-squeezed lemon juice
- Fresh chopped coriander to taste
- 2 large lemons, sliced thin
- 4 fresh Atlantic salmon fillets, about 7 oz. (200 g) each
- 3 garlic cloves, chopped
- 3 Tbsp. (45 mL) sliced Selection almonds
Preparation
Preheat oven to 450°F/230°C.
In a bowl, mix condensed chicken broth, oil, lemon juice and coriander together. Set aside.
Line an ovenproof dish with half the lemon slices. Place salmon fillets on top. Add liquid mixture.
Cover with remaining lemon slices and garlic. Sprinkle with sliced almonds.
Bake 15 min. or until fish flakes easily with a fork.
Suggestion
Note: When cooking salmon fillets, calculate 10-12 min. per inch (2.5 cm) of thickness.* We recommend Selection and Irresistibles products.
