Recipe ingredients
- 4 fresh snapper fillets
- 1 Tbsp. (15 mL) olive oil*
- 3 green onions, coarsely chopped
- 1/2 red pepper, cubed
- 2 tsp. (10 mL) minced gingerroot
- 1 cup (250 mL) canned pineapple chunks, drained*
- 2 Tbsp. (30 mL) honey*
- Tabasco sauce to taste
Preparation
Preheat oven to broil.
Place snapper fillets on a lightly oiled baking sheet on a rack 5 in. (13 cm) below broiler. Broil 12-15 min. or until fish flakes easily with a fork.
Meanwhile, in a skillet, heat 1 Tbsp. (15 mL) oil and cook green onions, pepper and ginger 1 min. Add pineapple chunks and honey. Cook another 3 min. Add Tabasco sauce Tabasco and cook 1 min. or until liquid evaporates.
Suggestion
