Recipe ingredients
- 1 907-g bag fresh mussels
- 1 Tbsp. (15 mL) Irresistibles olive oil*
- 2 garlic cloves, chopped
- 1 leek, sliced
- 2 tomatoes, seeded and cubed
- 1/2 orange pepper, diced
- 1 stalk celery, diced
- 1/2 cup (125 mL) white wine
- 1 Tbsp. (15 mL) fresh squeezed lemon juice
- 2 Tbsp. (30 mL) chopped fresh dill
Preparation
Brush and wash mussels under running water. Set aside.
In a big pot, heat oil and cook garlic, leek, tomatoes, pepper and celery for 3 minutes.
Add mussels, wine and lemon juice. Cook, stirring frequently, for 5 minutes or until mussels open. Any unopened mussels are bad; discard them.
Stir in dill.
