Recipe ingredients
- Marinade:
- 1 cup (250 mL) plain yogurt *
- 1/4 cup (60 mL) chopped fresh coriander
- Juice and zest of 2 limes
- 2 garlic cloves, chopped
- 1 small hot pepper, any kind, seeded and chopped fine
- Salt and freshly ground pepper to taste
- 4 boneless, skinless Flamingo chicken breasts
Preparation
In a shallow glass dish, mix marinade ingredients together. Add chicken breasts. Make sure they are evenly coated. Cover and refrigerate for 2-4 hours, turning occasionally.
Preheat barbecue to medium.
Drain chicken and cook 8-10 minutes per side or until cooked through. Serve with coriander rice and a brochette of grilled exotic fruits (mango, papaya, pineapple).
