Recipe ingredients
- 3 Tbsp. (45 mL) extra-virgin olive oil
- 1 onion, minced
- 2 cups (500 mL) basmati rice
- 1 tsp. (5 mL) curry
- 1 can (355 mL) Dry beer
- 1/2 cup (375 mL) chicken broth, reconstituted
- 1 red pepper, chopped
- 1/4 cup (60 mL) chopped chives
- White pepper to taste
- 1 Tbsp. (15 mL) chopped parsley
Preparation
In a pan with a lid, heat oil; cook onion without browning.
Add rice and curry; stir constantly 1 minute.
Add beer and chicken broth.
Bring to a boil and lower to minimum; cover and cook 15 minutes.
Remove lid; add red pepper, chives and pepper.
Cover and cook over low heat 5 minutes.
Garnish with parsley and serve.
