Recipe ingredients
- Basting Sauce:
- 3 Tbsp. (45 mL) olive oil*
- 2 tsp. (10 mL) fresh-squeezed lemon juice
- 1 tsp. (5 mL) white wine vinegar
- Salt and freshly ground pepper to taste
- 4 fresh salmon steaks, weighing around 6-7 oz. (180-210 g) each
- 5 plum tomatoes, seeded and diced
- 1/4 cup (60 mL) chopped white onion
- 2 Tbsp. (30 mL) chopped fresh basil
- 1 Tbsp. (15 mL) chopped fresh oregano
- 2 Tbsp. (30 mL) olive oil*
- 1 tsp. (5 mL) sugar*
- 2 garlic cloves, chopped
Preparation
Preheat barbecue to medium.
In a bowl, mix sauce ingredients together and set aside.
Barbecue salmon steaks on oiled grill for 4-5 minutes per side or until flesh turns opaque. Brush with sauce during cooking.
Meanwhile, mix remaining ingredients together. Season to taste.
Serve salmon with tomato salsa.
