Recipe ingredients
- 1 cup (250 mL) tomato salsa with pieces
- 1/2 cup (125 mL) fresh coriander, chopped
- 3 cups (750 mL) fresh tomatoes, chopped
- 2 yellow peppers, diced
- 2 boxes 19 oz. (540 mL) black beans, rinsed and drained
- 2 lbs (900 g) cooked shrimp, shelled
- 6 cups (1,5 L) lettuce, cut in strips
- 6 cups (1,5 L) nacho type corn chips
Preparation
In a bowl, mix the salsa and coriander. Add the tomatoes, peppers, black beans and shrimp. Mix and set aside.
Place 4 cups (1 L) of corn chips all around a platter or in individual bowls and place the lettuce in the centre. Break up the rest of the corn chips, add them to the salad and mix. Place the salad on the lettuce and serve immediately.
Suggestion
Add the flesh from an avocado, cut in small cubes and sprinkled with lime juice to keep them from darkening.* We recommend Selection and Irresistibles products.
