Recipe ingredients
- 1/4 cup (60 mL) vegetable oil*
- 1/3 cup (80 mL) dark rum
- 1/2 cup (125 mL) fresh orange juice*
- 1/4 cup (60 mL) pineapple juice
- 3 Tbsp. (45 mL) brown sugar
- 2 tsp. (10 mL) allspice
- 2 tsp (10 mL) ground cumin seed
- 8 skinless chicken thighs with bone
Preparation
In a bowl, mix oil, rum, orange juice, pineapple juice, brown sugar, and seasonings.
Place chicken thighs in a shallow dish and pour on marinade. Cover and refrigerate for 2 hours.
Preheat barbecue at medium.
Drain chicken thighs and place them on oiled barbecue grill. Cook 8 to 10 minutes, or until chicken is well done. Brush them with marinade while cooking.
