Recipe ingredients

  • 1 of each: yellow and green summer squash, cut in lengthwise strips, 1/4 inch (5 mm) thick
  • 1 each of: red and orange hot pepper, seeded and cut in 8 quarters
  • 8 White or Coffee mushrooms
  • 1 small red onion, cut in 8 quarters
  • 2 Tbsp. (30 mL) olive oil*
  • 1 Tbsp. (15 mL) balsamic vinegar*
  • Salt and ground pepper to taste
  • 1 1/2 tsp (7 mL) of each: fresh or dried oregano, basil and parsley

Preparation

Preheat barbecue at medium-high.

Thread vegetables onto brochettes; set aside.

In a bowl, mix oil, balsamic vinegar, salt and pepper. Brush vegetables.

Sprinkle fines herbs onto the brochettes.

Place the vegetables on the oiled grill and cook 2 to 3 minutes per side, or until they are soft but still crunchy.

Suggestion

You may want to cook the vegetables in a double-layered aluminum foil papillote. Seal the sides of the papillote well and cook 8 to 10 minutes.
