Apple and Vegetable Lamb Brochettes

Recipe ingredients
- 1 lb (450 g) fresh lamb, shoulder or leg, cut in equal cubes
- 1 green hot pepper, chunks
- 2 red apples, cut in 8 slices
- Marinade:
- 1/2 cup (125 mL) white wine
- 1/4 cup (60 mL) olive oil*
- 1/2 cup (125 mL) orange juice*
- 1 Tbsp. (15 mL) garlic clover, chopped
- 3 Tbsp. (45 mL) fresh mint, chopped
- 1 Tbsp. (15 mL) orange zest
- 1/4 tsp (1 mL) ground ginger
Preparation
In a glass bowl, mix marinade ingredients. Set aside 1/4 cup (60 mL) of marinade for brushing.
Place lamb cubes in marinade and refrigerate at least 4 hours, turning them over occasionally.
Preheat barbecue at medium-high.
Thread lamb cubes onto 4 brochettes, alternating meat with slices of hot pepper and apple.
Place the brochettes on an oiled grill and cook each side 6 to 8 minutes, brushing regularly with marinade set aside.
