Recipe ingredients

  • Marinade
  • 1/4 cup (60 mL) coconut milk
  • Juice of 1 lime
  • 1 jalapeño, chopped
  • 4-5 drops balsamic vinegar*
  • 1 tsp. (5 mL) fresh grated ginger
  • 2 tsp. (10 mL) chopped garlic
  • 4 plain boneless chicken breasts
  • Fruit Salad:
  • 4 clementines, cut up
  • 1 ripe mango, diced
  • 1/2 pineapple, diced
  • 2 pears, diced
  • 1/4 cup (60 mL) seedless red grapes
  • 1/4 cup (60 mL) halved strawberries
  • 1/4 cup (60 ml) honeydew melon, diced
  • 1/4 cup (60 ml) cantaloupe
  • 1 cup (250 mL) pure unsweetened orange juice*
  • 5-10 cardamom seeds
  • 2 Tbsp. (30 mL) pure maple syrup*

Preparation

Mix marinade ingredients together.
Marinate chicken in the refrigerator for at least 3 hours.
Mix fruit salad ingredients and let stand in the refrigerator.
Preheat barbecue to medium.
Drain chicken breasts.
Cook chicken 4-5 minutes per side.
Spoon salad into soup plates.
Cut hot chicken into thin slices and, while still hot, lay over salads.
Serve immediately.
