Recipe ingredients
- Marinade
- 1/4 cup (60 mL) coconut milk
- Juice of 1 lime
- 1 jalapeño, chopped
- 4-5 drops balsamic vinegar*
- 1 tsp. (5 mL) fresh grated ginger
- 2 tsp. (10 mL) chopped garlic
- 4 plain boneless chicken breasts
- Fruit Salad:
- 4 clementines, cut up
- 1 ripe mango, diced
- 1/2 pineapple, diced
- 2 pears, diced
- 1/4 cup (60 mL) seedless red grapes
- 1/4 cup (60 mL) halved strawberries
- 1/4 cup (60 ml) honeydew melon, diced
- 1/4 cup (60 ml) cantaloupe
- 1 cup (250 mL) pure unsweetened orange juice*
- 5-10 cardamom seeds
- 2 Tbsp. (30 mL) pure maple syrup*
Preparation
Mix marinade ingredients together.
Marinate chicken in the refrigerator for at least 3 hours.
Mix fruit salad ingredients and let stand in the refrigerator.
Preheat barbecue to medium.
Drain chicken breasts.
Cook chicken 4-5 minutes per side.
Spoon salad into soup plates.
Cut hot chicken into thin slices and, while still hot, lay over salads.
Serve immediately.
