Recipe ingredients
- 1 lemon, juice and zest
- 2 Tbsp. (30 mL) Irresistibles extra virgin olive oil*
- 2 Tbsp. (30 mL) honey*
- 2 tsp. (10 mL) Irresistibles balsamic vinegar*
- 2 1/2 cups (625 mL) cantaloupe balls
- 1 200-g container mini bocconcini
- 2/3 cup (160 mL) smoked ham slices*, cut in thin strips
- 3 Tbsp. (45 mL) shredded fresh mint
Preparation
In a bowl, mix lemon juice and zest with oil, honey and balsamic vinegar. Set aside.
In another bowl, gently mix remaining ingredients together.
Add dressing and toss lightly. Chill salad for at least 30 minutes before serving.
