Recipe ingredients

  • 1/2 cup (125 mL) liquid honey*
  • 1/2 cup (125 mL) cider vinegar
  • 2 tsp. (10 mL) grated orange peel
  • 1 tsp. (5 mL) cumin
  • 4 cups (1 L) grated carrots
  • 1 large onion, sliced very thin

Preparation

In a saucepan, heat honey with vinegar, orange peel and cumin over medium heat.
Add carrots and onion and cook over low heat for 30 minutes or until carrots and onion are translucent. Refrigerate and serve cold.

Suggestion

Replace orange peel with a dash of Grand Marnier.
