Recipe ingredients
- 2 large tomatoes, various colours, sliced
- 1 red onion, in rounds
- 4 fillets (140 g each) Merit Selection's The Irresistibles mahi-mahi, thawed
- 3/4 cup (180 mL) Feta cheese, flaked
- 3 Tbsp. (45 mL) fresh parsley, chopped
- 2 Tbsp. (30 mL) fresh oregano
- 1/3 cup (80 mL) Kalamata olives
- 1/2 cup (125 mL) white wine
- Juice of 1 lemon
- Salt and freshly ground pepper to taste
Preparation
Preheat oven at 200ºC/400ºF. Place half of tomato slices and half of onion rounds in an 8 x 11.5 x 2 in. (20 x 29 x 5 cm) oven dish. Place the mahi-mahi filets over top and cover with the remaining tomatoes and onions. Add Feta, parsley, oregano and olives.
Pour in wine and lemon juice. Salt and pepper to taste.
Cook approximately 18 to 20 minutes, until mahi-mahi
meat is opaque.
