Lime-scented Fillet of Sole Bundles

Recipe ingredients
- 4 5-oz. (150-g) fillets of sole
- 1 tsp. (5 mL) lime peel
- 1 Tbsp. (15 mL) chopped garlic
- 1 tsp. (5 mL) sesame oil
- 1/4 cup (60 mL) olive oil*
- 1 1/2 cups (375 mL) medium-sliced mushrooms
- 1 1/2 cups (375 mL) sliced baby corn
- 1 cup (250 mL) finely diced red pepper
- Salt and freshly ground pepper to taste
- 1/3 cup (80 mL) freshly squeezed lime juice
- 1/4 cup (60 mL) minced green onions
Preparation
Preheat BBQ to medium.
In a large bowl, combine peel, garlic, oils, mushrooms, baby corn and diced pepper. Season to taste.
Prepare bundles, laying four sheets of parchment paper on top of four sheets of foil.
Divide vegetable mixture among the four bundles, spooning it in the centre of each.
Lay fillets on top of vegetable mixture, drizzle with lime juice and sprinkle with minced onions.
Seal bundles and cook on the BBQ for about 10 minutes.
