Recipe ingredients

  • 2 Tbsp. (30 mL) olive oil*
  • 1 yellow onion, sliced very thin
  • 1/2 cup (125 mL) couscous
  • 1/3 cup (80 mL) frozen green peas, thawed
  • 2 Tbsp. (30 mL) toasted flaked almonds
  • 1/2 cup (125 mL) chicken broth*
  • Salt and pepper to taste
  • 1 Tbsp. (15 mL) butter*

Preparation

In a pot, cook onion in hot oil for about 3 minutes.
Add couscous and all remaining ingredients except butter.
Simmer 5 minutes, stirring with a fork.
Remove from heat and stir in butter with a fork. Serve hot or warm.

Suggestion

Add chopped fresh parsley.
