Recipe ingredients
- Salsa
- 1/2 cup (125 mL) chopped red onion
- 1 large mango, peeled and diced
- 1/2 English cucumber, diced
- 3 plum tomatoes, seeded and diced
- 1/4 cup (60 mL) craisins
- 1/4 cup (60 mL) chopped fresh coriander
- Irresistibles sea salt* and freshly Irresistibles ground black pepper* to taste
- 1/4 cup (60 mL) Irresistibles extra virgin olive oil*
- Juice and zest of 1 lime
- Irresistibles sea salt* and freshly irresistibles ground black pepper* to taste
- 4 salmon steaks
- 2 Tbsp. (30 mL) Irresistibles extra virgin olive oil*
Preparation
Salsa
In a bowl, mix salsa ingredients together. Refrigerate for at least 1 hour.
In a grill pan
Heat oil on medium-high heat and grill salmon steaks about 3 minutes per side. Season.
Barbecue
Preheat barbecue to medium.
Barbecue salmon steaks on oiled grill for 4-5 minutes per side or until flesh turns opaque.
Serve steaks on a bed of rice with salsa.
Garnish with coriander.
Suggestion
Let stand salsa for 1 hour.
For best results, pat fish dry to remove excess moisture.
Cook to golden on one side, then turn over to cook the other side.
