Recipe ingredients

  • 2 Tbsp. (30 mL) butter*
  • 1 leek, sliced
  • 3 garlic cloves, chopped
  • 3 to 4 carrots, cubed
  • Salt and pepper to taste
  • 1 tsp. (5 mL) Irresistibles poultry seasoning*
  • 1 uncooked chicken breast cut in strips
  • 1 cup (250 mL) chicken broth*
  • 2 Tbsp. (30 mL) cornstarch*
  • 3 cups (750 mL) milk
  • 1/2 pkg. coarsely-chopped spinach, stems removed
  • 1 cup (250 mL) corn kernels*, drained

Preparation

Sauté the leek, garlic and carrots for 3 minutes. Add the salt, pepper and poultry seasoning.
Add the chicken and cook 3 minutes.
Add the chicken stock and continue cooking for 5 minutes or until the vegetables are almost cooked.
Mix the cornstarch with the milk and add to the mixture. Cook until the mixture thickens.
Add the spinach and corn. Cook 2 minutes.
