Recipe ingredients
- 2 medium onions, minced
- 1 garlic clove, minced
- 1 Tbsp. (15 mL) butter
- 1 Tbsp. (15 mL) oil
- 3 Tbsp. (45 mL) all-purpose flour*
- 1/4 cup (60 mL) canned tomato paste
- 4 cups (1 litre) vegetable stock
- 1 28-oz. (796-mL) can diced tomatoes*
- 1 tsp. (5 mL) sugar
- 1½ tsp. (7 mL) salt
- 1 pinch ground pepper
- 1/4 cup (60 mL) table cream
- 8 leaves fresh basil
Preparation
In a pot, cook onion and garlic in butter and oil until glassy. Stir in flour and tomato paste. Add broth, stirring constantly to prevent lumps. Bring to a boil and add diced tomatoes. Cover and cook about 10 minutes over low heat. Season with sugar, salt and pepper. Pour into bowls and garnish with a swirl of cream and basil leaves.
Suggestion
Replace canned tomatoes with 1 kg ripe fresh tomatoes, peeled and diced.* We recommend Selection and Irresistibles products.
