Recipe ingredients
- 2 3/4 cups (680 mL) pastry flour*
- 1 Tbsp. (15 mL) ground ginger
- 1/2 tsp. (2 mL) ground cinnamon
- 1 1/2 tsp. (7 mL) ground nutmeg
- 1 1/2 tsp. (7 mL) ground cloves
- 1 Tbsp. (15 mL) salt
- 1 Tbsp. (15 mL) baking soda*
- 1/2 cup (125 mL) unsalted butter*
- 1/2 cup (125 mL) yellow sugar
- 1 cup (250) molasses*
- 1 cup (250 mL) buttermilk
- 1/4 cup (60 mL) orange juice*
- 2 eggs, lightly beaten
Preparation
Preheat oven to 350ºF/180ºC.
Butter and flour cake pan.
In a bowl, combine flour, spices and baking soda. Set aside. In a saucepan, melt butter, sugar and molasses together. Cool. Stir in buttermilk, orange juice and eggs. Mix liquid ingredients into dry ingredients. Pour batter into cake pan and bake 35-40 minutes in the centre of the oven.
Ice and decorate as you wish.
