Recipe ingredients

  • 2 3/4 cups (680 mL) pastry flour*
  • 1 Tbsp. (15 mL) ground ginger
  • 1/2 tsp. (2 mL) ground cinnamon
  • 1 1/2 tsp. (7 mL) ground nutmeg
  • 1 1/2 tsp. (7 mL) ground cloves
  • 1 Tbsp. (15 mL) salt
  • 1 Tbsp. (15 mL) baking soda*
  • 1/2 cup (125 mL) unsalted butter*
  • 1/2 cup (125 mL) yellow sugar
  • 1 cup (250) molasses*
  • 1 cup (250 mL) buttermilk
  • 1/4 cup (60 mL) orange juice*
  • 2 eggs, lightly beaten

Preparation

Preheat oven to 350ºF/180ºC.

Butter and flour cake pan.

In a bowl, combine flour, spices and baking soda. Set aside. In a saucepan, melt butter, sugar and molasses together. Cool. Stir in buttermilk, orange juice and eggs. Mix liquid ingredients into dry ingredients. Pour batter into cake pan and bake 35-40 minutes in the centre of the oven.

Ice and decorate as you wish.
