Recipe ingredients

  • 8 dry cookies (Graham crackers, oatmeal cookies, ginger snaps)
  • 2 Tbsp. (30 mL) butter melted*
  • 2 Tbsp. (30 mL) sugar
  • 8 oz. (250 g) cream cheese*
  • 2 whole eggs
  • 3/4 cup (180 mL) sugar
  • 2 Tbsp. (30 mL) all-purpose flour*
  • 1/2 tsp. (2 mL) vanilla
  • 3/4 cup (180 mL) cherry pie filling*

Preparation

Preheat oven to 350ºF/180º C.
In the food processor, crush cookies and mix with butter and sugar.

Pat mixture into muffin tin or ramekins.

Bake 5-7 minutes in the centre of the oven.

Meanwhile, mix cheese with eggs, sugar, flour and vanilla. Set aside.

Spoon cheese mixture into cookie crusts and bake 15 minutes in the centre of the oven. Cool.

Turn out and top with cherry pie filling.

Suggestion

Irresistible ultra light fruit spread (strawberry and blueberry, peach and mango, strawberry or raspberry) can be substituted for cherry pie filling.
