  • Crust
  • 1/4 cup (60 mL) flour*
  • 2 Tbsp. (30 mL) sugar
  • 1 cup (250 mL) chocolate Graham cracker crumbs
  • 1/2 cup (125 mL) butter*, melted
  • 1 Tbsp. (15 mL) butter (to grease tin)*
  • Filling
  • 3/4 cup (180 mL) sugar
  • 1/4 cup (60 mL) all-purpose flour*
  • 1/2 tsp. (2 mL) salt
  • 1 Tbsp. (15 mL) lemon zest
  • 1 ripe banana, mashed
  • 3 eggs*
  • 1/3 cup (80 mL) lemon juice*
  • 3 Tbsp. (45 mL) whipping cream*
  • 2 Tbsp. (30 mL) icing sugar

Preparation

Preheat oven to 350ºF/180ºC.

In food processor, combine flour, sugar and Graham cracker crumbs. Add melted butter and pulse until dough is moist and sticky.

Butter medium-sized muffin tin. Press dough into 8 moulds. Crust should be about 1/2 in. (1 cm) thick.

In a bowl, make filling. Mix sugar, flour, salt and zest. Stir in banana, eggs, lemon juice and cream, until well blended.

Spoon filling into each mould.

Bake 15-18 minutes or until filling is firm.

Cool 30 min. then turn out and cool completely. Sprinkle with icing sugar.
