Vichyssoise with a Hint of Orange

Recipe ingredients
- 2 Tbsp. (30 mL) butter *
- 1 garlic clove, chopped
- 2 leeks, chopped (both white and green parts)
- 2 potatoes, peeled and diced
- 4 carrots, peeled and diced
- 1 1/4 cups (310 mL) chicken broth *
- 1 1/4 cups (310 mL) orange juice *
- 1 1/2 tsp. (7 mL) chopped fresh ginger
- 1/4 cup (60 mL) chopped fresh coriander
- Salt and pepper to taste
- 4 tsp. (20 mL) orange zest
- 2 cups (500 mL) milk
Preparation
In a pan, on low heat, melt butter and cook garlic and leeks until soft, about 6 minutes.
Add potatoes, carrots, broth, orange juice, ginger, coriander, salt and pepper. Bring to
a boil. Reduce heat and let simmer until vegetables are soft, about 20 minutes. Add orange zest in last five minutes of cooking.
Remove pan from heat and add milk. Purée in blender until smooth and creamy.
Cool soup in the refrigerator until well chilled, about 4 hours.
