Recipe ingredients

  • 2 red peppers
  • 2 large Italian tomatoes, peeled, seeded and chopped
  • 2 shallots, chopped
  • 3 Tbsp. (45 mL) white wine vinegar
  • 2 Tbsp. (30 mL) brown sugar
  • Salt to taste

Preparation

Roast the peppers in the oven. Peel and chop them.
In a casserole, place the roasted peppers and all the other ingredients.
Bring to a boil and let simmer about 60 minutes until the mixture thickens slightly.
Remove from heat and let cool completely.

Suggestion

Replace the oven roasted peppers with crock roasted peppers and the white wine vinegar with raspberry vinegar.
