Recipe ingredients
- 3 potatoes, peeled and cut into chunks
- Milk or half and half, as needed
- 1 onion, chopped
- 2 Tbsp. (30 mL) vegetable oil*
- 1 1/2 lb. (675 g) ground beef
- 2 Tbsp. (30 mL) chili powder
- 1 Tbsp. (15 mL) dried oregano
- 1 14-oz. (398 mL) can of corn*
- Salt and pepper to taste
Preparation
In a pot, boil potatoes until soft.
Using a ricer, mash potatoes, adding milk or cream as needed until smooth and creamy.
Season and set aside.
Preheat oven to 350°F/180°C.
In a skillet, brown onions in oil and add ground beef.
Cook meat on medium-high, breaking it up, until meat shows no pink.
Add oregano and chili powder.
Line a 2-quart (2-litre) casserole with meat, top with corn then mashed potatoes.
Bake approximately 20 minutes.
