Recipe ingredients

  • 8 slices French bread, about 1/2 inch (1.5 cm) thick, preferably stale
  • 4 oz (125 g) Canadian Cream Cheese, softened
  • 1/2 cup (125 mL) raspberry jam
  • 4 eggs
  • 1/2 cup (125 mL) milk
  • 1/2 tsp. (2 mL) vanilla extract
  • 1 Tbsp. (15 mL) vegetable oil
  • Icing sugar

Preparation

Spread Cream Cheese evenly on 4 slices of bread. Spread jam over cheese. Top with remaining slices of bread.

Whisk together eggs, milk and vanilla and pour mixture into a shallow dish just large enough to hold the 4 sandwiches. Place sandwiches in dish, turning over to cover evenly.

Heat oil in non-stick frying pan and fry sandwiches over medium-low heat for 2 ½ to 3 minutes per side or until golden brown. Sprinkle with icing sugar, cut and serve.

Suggestion

Ham and cheese toast. Use a slice of cooked ham and a few thin slices of Canadian Swiss cheese instead of cream cheese and jam.
