Recipe ingredients
- 6 slices bacon, chopped
- 8 oz (225 g) Canadian Aged or Extra Aged Cheddar, cubed
- 1/4 cup (60 mL) butter, cubed
- 2 Tbsp. (30 mL) chopped parsley
- 2 Tbsp. (30 mL) green onions
- 2 Tbsp. (30 mL) drained hot pepper rings, or to taste
- 3/4 cup (180 mL) toasted, finely chopped pecans
Preparation
In a large non-stick frying pan over medium-high heat, cook bacon until crisp. Drain, reserving 1 Tbsp. (15 mL) drippings; set bacon aside.
In bowl of food processor fitted with metal blade, place cheese, butter, parsley, green onions and pepper rings. Cover and process until smooth, stopping machine to scrape down sides of bowl as necessary. Add reserved drippings and bacon and process until bacon is finely chopped.
Chill mixture 3 hours or until firm enough to roll into 2 dozen balls, about 1 inch (2.5 cm) in diameter. If mixture softens too much during rolling, return to refrigerator until firm.
Roll balls in chopped pecans and refrigerate for up to 2 days before serving. Garnish as desired. Serve with crackers.
Suggestion
Shape cheese mixture into 1 large log or ball; roll in chopped pecans before refrigerating. For a change of taste, use Canadian Swiss, Gouda or Provolone.* We recommend Selection and Irresistibles products.
