Recipe ingredients
- 4 cups (1 L) shredded Canadian Aged Cheddar
- 1 pkg (85 g) Canadian Cream Cheese, softened
- 1 to 2 Tbsp. (15 to 30 mL) Irresistibles olive oil*
- 1 tsp. (5 mL) dry mustard*
- 1 tsp. (5 mL) Irresistibles garlic salt*
- 2 Tbsp. (30 mL) brandy
- Sufficient quantity, crackers*
Preparation
In blender or food processor, blend Cheddar and Cream Cheese, olive oil, mustard, garlic salt and brandy until smooth. Pack into a crock or other container and cover tightly. Refrigerate for 1 week before serving.
Let stand for 1 hour at room temperature before serving. Spread on crackers.
Suggestion
To replenish mixture, add any kind of firm cheese, such as Canadian Swiss, Monterey Jack or Colby, shredded.
Beat in with small amounts of Cream Cheese and olive oil to maintain consistency. Also add 2 Tbsp (30 mL) brandy, port, kirsch or beer for each cup (250 mL) of cheese added.
Always cover and refrigerate for a few days before serving again.
