Recipe ingredients

  • 4 poultry tournedos (turkey, chicken or guinea fowl)
  • Allowed oil (non allergenic)
  • Marinade
  • 1/2 cup (125 mL) raspberry juice
  • 1/2 cup (125 mL) port or allowed red wine (non allergenic)
  • Salt and pepper to taste
  • Raspberry sauce
  • 1/2 cup (125 mL) port or allowed red wine (non allergenic)
  • 1/3 cup (80 mL) brown sugar
  • 1 1/2 tsp. (7 mL) allowed Dijon mustard (non allergenic)
  • 1 cup (250 mL) fresh or frozen raspberries

Preparation

Prepare the marinade.
Pour the marinade on the tournedos and marinate 4 to 6 hours.
Raspberry sauce: in a saucepan, mix port, brown sugar, mustard and raspberries. Cook 10 minutes over medium heat. Blend in the food processor. Keep warm.
Cook the tournedos on the barbecue or grill them in an open frying pan.
