Recipe ingredients
- 6 medium potatoes, peeled, quartered
- 1 cup (250 mL) diced Brie
- 3/4 cup (180 mL) sour cream*
- 1/4 cup (60 mL) butter*, softened
- 3 Tbsp. (45 mL) finely chopped green onions
- Salt and pepper to taste
- 1 cup (250 mL) fresh bread crumbs
- 1 Tbsp. (15 mL) butter*, melted
Preparation
Preheat oven to 325°F/160°C.
In large saucepan, cook potatoes in boiling salted water 20 minutes or until tender. Drain and break up with fork.
Stir in cheese, sour cream, butter and green onions; add salt and pepper to taste.
Spread potato mixture evenly in a 1 1/2 qt (1.5 L) shallow rectangular baking dish or in four 1 1/2 cups (375 mL) shallow baking dishes.
Combine bread crumbs and 1 Tbsp. (15 mL) melted butter; sprinkle evenly over potatoes. Bake 15 minutes or until heated through.
Suggestion
Variation: For a change of taste, use shredded Canadian Swiss, Mozzarella, Havarti or Cheddar.To make fresh bread crumbs, tear bread into chunks and place in blender jar. Cover and blend thoroughly to make even crumbs. One slice makes about 1/2 cup (125 mL).
