Recipe ingredients
- Raspberry Dressing:
- 3 Tbsp. (45 mL) raspberry vinegar OR raspberry wine vinegar
- 1/3 cup (80 mL) olive oil
- 1 Tbsp. (15 mL) sugar
- 1/4 cup (60 mL) frozen raspberries, thawed and crushed
- Whole raspberries for garnish
- 350 g (12 oz) bag mixed young salad greens
- 1/2 lb (225 g) Canadian Brie
- 2 ripe pears with peel, cored and thinly sliced
Preparation
Whisk together all dressing ingredients, except for whole raspberries. Set aside.
Divide greens among 4 plates and set aside.
Wrap cheese in foil and heat for 5 minutes in oven at 400°F/200°C or cover cheese with plastic wrap and heat until soft in microwave at Medium for 45 seconds.
Cut cheese in slices and gently arrange over salad using a small spatula.
Garnish plates with pear, arranging slices like flower petals.
Sprinkle raspberry dressing over salad and garnish with whole raspberries. Serve warm.
