Recipe ingredients
- 4 halibut
- 2 Tbsp. (30 g) butter
- 1/4 cup (60 mL) olive oil
- Salt and freshly ground pepper to taste
- 1/2 cup (125 mL) white Vermouth or Martini
- 1/2 cup (125 mL) whipping (35%) cream
- 1 Tbsp. (15 mL) chopped fresh chives or tarragon
- 3 oz (90 g) Canadian Brie, diced
- 3 oz (90 g) fresh green beans, trimmed
Preparation
In a frying pan, cook fish in butter and oil, about 10 minutes per inch (2.5 cm) of thickness. Season with salt and pepper and set aside.
Add Vermouth to pan and boil to reduce by half. Stir in cream and reduce again. Add fresh chives and cheese. Whisk to blend and check seasoning.
Meanwhile, cook green beans in boiling water for about 3 minutes, until cooked but still crisp.
Arrange fish on a bed of green beans. Spoon sauce over top.
