Recipe ingredients
- 1 Tbsp. (15 mL) vegetable oil*
- 1 14-oz. (398 mL) can baby corn*, drained and sliced
- ½ red pepper, diced
- 3 Tbsp. (45 mL) chopped fresh parsley
- Salt and pepper to taste
- 4 cups (1 L) basmati rice, cooked in vegetable broth
Preparation
In a skillet, heat oil over medium-high heat and cook all ingredients except rice. When vegetables are tender crisp, stir in rice and serve
