Recipe ingredients

  • 1 Tbsp. (15 mL) vegetable oil*
  • 1 14-oz. (398 mL) can baby corn*, drained and sliced
  • ½ red pepper, diced
  • 3 Tbsp. (45 mL) chopped fresh parsley
  • Salt and pepper to taste
  • 4 cups (1 L) basmati rice, cooked in vegetable broth

Preparation

In a skillet, heat oil over medium-high heat and cook all ingredients except rice. When vegetables are tender crisp, stir in rice and serve
