Recipe ingredients

  • 3 large ripe tomatoes, peeled, seeded and diced
  • 3 Tbsp. (45 mL) chopped fresh basil
  • 2 Tbsp. (30 mL) chopped fresh coriander
  • 2 cloves garlic, finely chopped
  • 2 Tbsp. (30 mL) lime juice
  • 3 green onions, chopped
  • 1/3 cup (80 mL) olive oil
  • Freshly ground pepper
  • 1 baguette bread, cut into 16 slices
  • 1/4 lb (115 g) Canadian Borgonzola or Bleubry, thinly sliced, at room temperature
  • Lettuce leaves

Preparation

Preheat oven to 300°F/150°C.

In a bowl, combine tomatoes, basil, coriander, garlic, lime juice, green onions and olive oil. Pepper generously. Let stand for 30 minutes.

Meanwhile, top bread with cheese. Toast in oven for a few minutes until golden and crispy. Remove from oven.

Arrange lettuce leaves on 4 plates, top with tomato mixture and 4 slices of toast. Serve immediately.
