Californian Bruschetta with Blue Cheese

Recipe ingredients
- 3 large ripe tomatoes, peeled, seeded and diced
- 3 Tbsp. (45 mL) chopped fresh basil
- 2 Tbsp. (30 mL) chopped fresh coriander
- 2 cloves garlic, finely chopped
- 2 Tbsp. (30 mL) lime juice
- 3 green onions, chopped
- 1/3 cup (80 mL) olive oil
- Freshly ground pepper
- 1 baguette bread, cut into 16 slices
- 1/4 lb (115 g) Canadian Borgonzola or Bleubry, thinly sliced, at room temperature
- Lettuce leaves
Preparation
Preheat oven to 300°F/150°C.
In a bowl, combine tomatoes, basil, coriander, garlic, lime juice, green onions and olive oil. Pepper generously. Let stand for 30 minutes.
Meanwhile, top bread with cheese. Toast in oven for a few minutes until golden and crispy. Remove from oven.
Arrange lettuce leaves on 4 plates, top with tomato mixture and 4 slices of toast. Serve immediately.
