Recipe ingredients
- 3 cups (750 mL) cooked rice
- 1 Tbsp. (15 mL) poppy seeds
- 4 Tbsp. (60 mL) unbleached flour
- 2 eggs*, beaten
- 1 1/3 cups (325 mL) crumbled Canadian Bleu cheese
- 1/3 cup (80 mL) sour cream or plain yogurt
- Salt and pepper to taste
- Sufficient qty. butter*
- Sufficient qty. Irresistibles extra virgin olive oil*
- Pieces of fruit to taste
Preparation
In a large bowl, stir together rice, poppy seeds, flour, cheese and sour cream. Salt and pepper to taste. Stir with a fork until fairly smooth.
In a large nonstick frying pan over medium heat, heat a little butter and oil. A tablespoon (15 mL) at a time, drop mixture into frying pan, keeping them well spaced. Flatten slightly with a spatula.
Cook for a few minutes on each side until crunchy. Remove and place on paper towels. Repeat until all the mixture is cooked.
Sprinkle with poppy seeds and serve immediately with fruit.
